July: Muscovado Pears

On the Esporão 2017 Planner you’ll find recipes by some of our co-workers, one for each month, with pairings to try at home. Every and each one of them were illustrated by the portuguese artist Ana Gil, architect by formation, and a gastronomy illustrator by heart.

This July, our Laboratory Manager, Inês Aranha, suggests Muscovado Pears.


  • 8 Rocha pears
  • 1 teaspoon butter
  • 3 tablespoons muscovado sugar
  • 1 cartoon sweetned greek yogurt
  • Digestive biscuit
  • Water mint


Peel the pears and cut them into wedges (eighths). Add the butter and muscovado sugar to a non-stick pan. Heat and stir gently until consistent.

Add the pear wedges and leave over a low heat until they brown on both sides and soften (about 7 minutes).

Serve in bowls with a little of the sauce, 2 tablespoons of greek yogurt, half a crumbled digestive biscuit and mint leaf.
