RESTAURANT

 

Open since 1997 and located in the Herdade do Esporão estate, our restaurant opens up to the outdoors, close to the origin of all our products – nature. With a terrace and view overlooking the vineyards, the space’s décor and architecture feature local materials that give precedence to authenticity and the comfort of those who visit us.

The cuisine offers a modern interpretation and preparation, centred around the product – ‘Alentejano’, Portuguese, seasonal. The ingredients are grown in our organic vegetable gardens or come to us from local and national producers we work with all year round. We respect the product throughout its entire cycle, maximising it to the fullest. Our kitchen is sustainable and zero waste.

The Michelin Guide recently recognised us with a Michelin Star and Michelin Green Star.

MENU

The dishes that make up our menus are crafted according to the seasons, using products from our organic vegetable gardens and local and national producers. We work with the ingredients that nature offers us, therefore our menu changes frequently.

CARTA BRANCA (CARTE BLANCHE) MENU

With the Carta Branca Menu, your meal is completely in the hands of the Chef, who will define a tasting menu featuring five or seven moments, with wine pairings.

TEAM

CHEF CARLOS TEIXEIRA
Carlos Teixeira began his gastronomical journey at the Escola de Hotelaria e Turismo de Lisboa (Hotel and Tourism School of Lisbon), at the age of 14. After finishing the course, he entered the Food Production in Catering course at ESHTE, where he had the opportunity to intern with Henrique Mouro at the restaurant Assinatura and, in his final year, at the Hotel Claris (5 stars), in Barcelona.

When he completed his degree, he worked at the Grémio Literário and then Rota das Sedas, in Lisbon. In 2014 he moved to London for an internship at the Clove Club (1 Michelin Star). He returned to Portugal to work at the Herdade do Esporão restaurant as Sous-chef, and in 2018 he was invited to lead the kitchen. In recent years, he interned at Nolla, in Finland, a global leader in zero waste, and at Blue Hill, a farm-to-table restaurant in Stone Barns (USA), recognised worldwide for its eco-friendly and low-waste practices, with two Michelin stars.
