PRODUCTION METHOD
Integrated Production (SATIVA certified)
SOIL GEOLOGY
Granitic, sandy, loamy
Manual harvest, pneumatic pressing of whole grapes. Cold decanting of the must for 24 hours. Fermentation at controlled temperature (10 – 15ºC), between 12 and 15 days.
On thin lees in 500L French oak barrels for about 12 months, followed by 6 months in the bottle.
Yellow.
Complex, most notably citric, floral and spicy aromas from its barrel stage.
With concentration and volume, its has a long and persistent finish. It will evolve well over the next 20 years.
