The first white grapes at the winery

The first few days are busy at the white wine winery. The white grape plots are the first to be harvested and, before they reach the winery, the grapes are placed on the scales to be weighed and samples taken for analysis. Immediately afterwards, it’s important to press them quickly, so they don’t get too warm or oxidize. The grape juice is extracted and, in order to retain all the aromas, it is then placed in vats where cold fermentation begins.
