Harvest of the month: lemon and coriander couscous

A simple dish full of flavor with one of the ingredients from our garden this month: coriander. Refresh a bottle of Esporão Colheita white before and accompany it with the dish.

Ingredients (2 servings)

  • 250gr couscous
  • Toasted pine nuts to taste
  • Chopped raisins
  • Zest of 1 lemon
  • 1 bunch of coriander, chopped
  • Esporão Extra Virgin Organic Olive Oil

Directions

Prepare 250gr of couscous, by covering it in boiling water. Wait 10 minutes andthen fluff the couscous with a fork. Season with salt and add all the ingredients, reserving some zest for decoration. Decorate the couscous with the reserved lemon zest and coriander.
