November: Sweet Spiced Potato Cookies

On the Esporão 2017 Planner you’ll find recipes by some of our co-workers, one for each month, with pairings to try at home. Every and each one of them were illustrated by the portuguese artist Ana Gil, architect by formation, and a gastronomy illustrator by heart.

This November, Ana Pocinho, from Customer Service department, suggests Sweet Spiced Potato Cookies, “the ideal recipe to make as a family”.

Ingredients (for about 30 cookies)

  • 1 kg boiled potatoes, peeled
  • 1 kg wheat flour
  • 1 kg sugar
  • 4 eggs
  • 1 tablespoon baking powder
  • 100 gr melted butter
  • Zest of 2 lemons
  • Shelled walnuts, raisins and diced figs
  • Cinnamon, to taste


Beat the eggs witha  fork and reserve. In a large bowl, mix the mashed potatoes with the sugar and flour, then knead it until you have a consistent dough. Add the beaten eggs, melted butter, lemon zest and baking powder. Finally, add the walnuts and dried fruit and knead well. Let the dough rest and rise for about 45 minutes. Make dumplings, place them on a floured tray and bake in a preheated oven (180ºC) until golden.
