Fennel, Orange and Salmon Salad

Hot weather calls for light meals and light wine. That’s why we made a salad with fresh flavored ingredients, that go so well with a wine with citrus notes and tropical fruits. Esporão Colheita white 2022.

Ingredients (serves 4)

  • 2 fennel bulbs
  • 2 oranges
  • 250 g of smoked salmon
  • 4 radishes
  • 2 mini cucumbers
  • Fennel branch at taste

  • Orange vinaigrette:

  • 50 ml of olive oil
  • Juice of ½ orange
  • Salt at taste


Thinly slice the fennel, radishes and cucumbers. Cut the orange into segments and set aside. Mix everything with the arugula and put it on a platter. Add the salmon and orange and a little fennel. For the vinaigrette, place the ingredients in a jar and shake well. Water the salad when serving.
