Ana Maria’s Octopus ‘à Lagareiro’

Ana Maria’s Octopus ‘à Lagareiro’

Quinta dos Murças is also special because of the people who live and work there. Anyone who visits this place, remembers the people there. Their simplicity and wisdom are an integral part of the region’s identity, much like the Douro’s gastronomy, which is rich in history and flavour.

For this episode, the Quinta dos Murças housekeeper, Ana Maria, prepares something worthy of this culinary heritage and an example of the finest Douro cuisine. Once eaten, never forgotten. Born in the town of Vila Real, Ana Maria used to watch her elders cook, her curious nature helping her learn all the secrets of local cuisine. Octopus was always one of regular ingredients in her grandmother’s kitchen and in homes throughout the region. Primarily boiled, it was important all year round, but particularly at Christmas. She enjoyed cooking it and began experimenting in different ways. First boiled, like at home, then grilled. Today octopus à la lagareiro is her speciality. It’s to die for.
