Ibero-American Gastronomic Event: a meeting of cultures

Seven renowned chefs from Latin America visited Portugal as a result of Lisbon’s status as Ibero-American Capital of Culture. The first and most eagerly awaited stop was at Lisbon’s Eleven restaurant. Chef Joachim Koerper welcomed Rodolfo Gúzman, from Chile, Felipe Bronze and Jorge Munõz, from Brazil, and Elena Reygadas, from Mexico, into his kitchen for a special dinner paired with some of our wines.

In addition to Joachim and the guest chefs, three Portuguese chefs, José Avillez, Ricardo Costa and Leonel Pereira were invited to get things started with the evening’s first dishes – cold-cooked squid with citrus fruit, fish stew, lobster cataplana with fava bean and turnip purée and oxtail.

The pork chop, spicy guava and lentil tutu by Brazilian chef Felipe Bronze of Restaurante Oro, in Rio de Janeiro, was the first dish presented by the international stars.

Elena Reygadas, who was considered the best female chef in Latin America in 2014, kicked off the starters with her pink pine nuts, merengue and toasted mamey pits.

Next was the humita dulce of Peruvian chef Jorge Muñoz, from the Nikkei Pakta restaurant in Barcelona, and, finally, the daring ice brulée and rose of the year sandwich by the Chilean chef, Rodolfo Gúzman.

Throughout the evening, the dishes were paired with Esporão Verdelho 2016, Private Selection white 2012, Reserva red 2014 and Quinta dos Murças Porto Tawny 10 anos.

The dinner was repeated the following night and the journey only ended at Herdade do Esporão with guests and journalists from each country.
