Agriculture

Integrated production (SATIVA certified)

This was an unusually hot and dry year. The long absence of rain and extremely high temperatures during the spring accelerated the grapes’ evolution and ripening. The harvest took place on September 20th.

Vinification / Maturation

Hand-picked grapes, destemming, crushing, fermentation with indigenous yeasts and temperature control (25ºC – 28ºC) in granite ‘lagares’, foot treading and pressing in an old-style vertical press.

Aged in used French oak casks for 18 months.
